As I know I must get email when ROR PRO subscription expires 1 month earlier, but can I somehow manually check my subscription remaining time?
and what if I forget or don’t resume my subscription will existing pro plugin stops working?

You can check the remaining trial period from the Subscription management platform (link: https://readonlyrest.chargebeeportal.com/portal/v2/login?forward=portal_main) using the email used for the subscription to access the information.
I would not worry about possible trial being put on hold and reassume it and its impact to the overall period. In case you need reasonable additional days to complete validation and integration tests on your side we will certainly extend the overall period.

when I enter the email in the download section it sends me download link of the PRO plugin
Could you contact support@readonlyrest.com directly for this? Which is the email you are using to login to subscription portal?
